Holiday Amuse Bouche
Vermont Cheddar, Dried Cranberry & Pumpkinseed 'Ornaments'
Dough
8 ounces Cabot 50% Light Cheddar, grated
2 large eggs
1/4 cup all-purpose flour
1 teaspoon chopped fresh sage
1/2 teaspoon kosher salt
1/2 teaspoon ground pepper
1 ounce dried cranberries
Coating Mix
1 large egg
1 teaspoon water
1/2 cup all-purpose flour
1 1/2 cups ground pepita or pumpkin seeds
Dough Preparation
Preheat oven to 400 degrees. Place all ingredients, except dried cranberries, in food processor. Mix for approximately 10 seconds, or just until ingredients come together. Transfer to mixing bowl and fold in cranberries. Form into approximately eighteen 1 1/2 inch balls
Coating Mix & Bake
In small bowl, whisk together egg and water. Place flour and seeds in two other small bowls. Dip each ball into flour, then into egg mixture, then into seeds.
Place on non-stick baking sheet and bake for
10 minutes.
